Harvested in the Umbrian region of Italy, just north of Rome in the center of valleys and lakes. Olives are as natural here as the people that inhabit the region. The olives are collected by the handpicked, shaker style. The taste is sweet with a bitter and soft pungent sensation and a herbaceous aroma. The color is golden with a light green cast and is very rich in polyphenols. A medium to robust full bodied flavor. Excellent finishing oil when sharing the flavor with favorite dish.
